ServSafe Manager Practice Questions: 12 Scenario Questions Explained Like a Study Guide

The ServSafe Manager exam almost never asks you to recite a rule. It describes a situation and asks what you do next. These twelve questions follow that pattern, with the reasoning spelled out.

Time and temperature

1. A pot of chili finished cooking at 2:00 PM and is at 90°F at 3:30 PM. What must happen?
The first cooling stage requires 135°F down to 70°F within two hours. Ninety degrees at the 90-minute mark is behind schedule but not yet a violation. The correct action is to actively cool it — ice bath, shallow pans, or a blast chiller — and monitor the two-hour checkpoint.

2. A walk-in cooler reads 44°F at the start of the shift. What is the corrective action?
Above the 41°F cold-holding limit. Move the food to a unit holding 41°F or below, and if the time in the danger zone is unknown, discard. The exam wants both halves: relocate and evaluate.

3. Leftover soup is being reheated for the hot bar. To what temperature?
165°F for 15 seconds, within two hours. The common wrong answer is 135°F, which is the hot-holding number, not the reheating number.

Personal hygiene

4. A cook coughs into their hand and continues plating. What is required?
They must stop, wash hands for 20 seconds, and re-glove. A glove is not a substitute for handwashing.

5. A food handler reports a sore throat and fever. What does the person in charge do?
Restrict or exclude based on the symptom and the role, and follow the reporting requirements. The exam tests the reporting trigger, not the diagnosis.

Cross-contamination and storage

6. Where does ground beef go relative to whole cuts of pork in the cooler?
Below. Storage order by cooking temperature, top to bottom: ready-to-eat, seafood, whole cuts of beef and pork, ground meat, poultry.

7. A cutting board used for raw chicken is wiped with a cloth and reused for salad. What is violated?
It must be cleaned and sanitized, not wiped. A wipe-down does not remove or kill what was on it.

Cleaning and sanitizing

8. What is the correct sequence for a three-compartment sink?
Wash, rinse, sanitize, air dry. Never towel dry — a towel recontaminates.

9. A chlorine sanitizer solution is prepared by eye. What is wrong?
Concentration must be measured against the manufacturer's label, using a test kit. Too weak does not sanitize; too strong is a chemical hazard.

Receiving and facilities

10. Frozen food arrives partially thawed with ice crystals and a stained box. Do you accept it?
Reject it. Ice crystals plus a stained box indicate it has thawed and refrozen, and the temperature history is unknown.

11. You see rodent droppings in dry storage. What is the correct response?
Notify the person in charge, clean and sanitize, and involve a licensed pest control operator. Staff handle prevention; infestations are not a staff-level fix.

12. What are the three keys to integrated pest management?
Deny entry, deny food, deny shelter.

How to use a question bank properly

Do not read the explanations as a list of facts. After each miss, write down which rule you misapplied rather than which answer you picked. Two or three rules usually explain most of your misses, and those are the only ones worth drilling.
